Sri Lanka Curry

Sri Lanka Curry has a mild and subtle flavor which is distinctively different from the usual Indian curries. The whole spices are roasted to a deep tone and the coriander, cumin, fennel and fenugreek separately resulting in a rich dark curry powder. It works well in any curry with a tomato or coconut milk base and is especially good with fish, poultry or vegetable curries.
